I have nowhere near the skills to make these work, but if others do, my first idea is
 
1) a handheld, wireless wifi throttle based on one of these.
 
 
or for those of us with fat senior fingers

 Designed as a secondary throttle for walk around use, just the size of the dial.  Using the outside rotating section as the speed control.  There is a touchscreen on it that could be used for basic functions, or whatever your fat fingers could click on.  They are complete esp32 units, except for an attached battery.  I think everything is included in it that we would need- the control, the display and wifi.
 
 
 
It should be easy to 3d print a battery that goes on the bottom, hopefully seamlessly to add lithium batteries.
 
I would love to be able to pick it up, put it in the palm of my hand, then walk around endlessly fixing my layout....
 
It would also, I think, make a fine commercial product
